...you know, where 90% of it is spent drifting on a race track, and the cars ability to do this seems to be important.

Sure, showboat a bit to get some cool footage, but I'm kinda tired of hearing how great it is that you can get the back end out through a corner and stuff, do people buy these cars and then actually do it, or are just happy to know that someone else has?

Even for the 2% of sports cars that might see a race track, how likely are they to be used in this manner?  I know I wouldn't, I'd be launching an assualt at cornering speed, maybe i'd just have a little fun on a corner or two here and there, but the ability to steer a car with the right foot isn't something that has much bearing on how good it is.

I want to see the cars on windy roads, spectacular scenery, tunnel runs, and carving their way through traffic.

It's mostly just a TV thing.  The magazine guys are told to flick it sideways for a cover pic but they do their testing without the nonsense.

and a really fast lap around a track is not that exciting from the outside.

I agree with mhh that the punter on TV is very different to the punter who buys the cars. I suspect that most people who buy these cars do not use them to their full capacity - and would never want to.

What about a "pick up" test - see how easy it is to pick up women with various kinds of cars?

We have seen what sort of woman you can get with a Lotus in Pretty Woman.

Read a review of anything in Motor lately?  That sort of thing is exactly why I didn't renew my subscription.  Too much talk of powersliding and clipping apexes and not enough real world stuff.
