I've got both headphones and earphones from Bose. For flying, you want the earbuds, not the cans. That way you can wear them while you sleep. QC20 are the go.

Like Aircon, I use them for driving too. They reduce fatigue noticeably. I took them to Alice Springs last year and the Speciale's tiring racket disappeared.
+1. Buds, 20's use USB charging and I haven't found a flight long enough to deplete them

I have a set of Panasonic RP-HC700 headphones I picked up cheap on a whim.  The noise cancelling works a treat on regular flights, cutting out maybe 90% of the noise, while allowing you to hear the faint but clear in cabin announcements when the music is not playing.  They're quite good, can;t remember how much they were but they were on the low end of the price range.

One thing I have noticed, in American Airlines Dash-8's these things resonate badly and don't really work.  But in the more well kept Qantas Dash-8's they work a treat - I'm stumped as to why...

If I had it to do again, I would have done some research by reading the reviews.

I heard the 2018 Iphone 8 will include a built in adapter and a stand alone jack so you don't have to use the lightning connector. :)
