Well - like I said, just fork out for the better cuts of meat.  The aged steak I bought last week was about $45/kg, I barely did anything to it AND I cooked it for *much* longer than I cook an average rib-eye, but it came out sensational and just completely fell apart - steak knife optional.

if u like salt, do it after youcook it not before

doing it before and letting it set in / marinate means the meat will likely release much more moisture and therefore dry out much quicker

thats the theory anyway

I'm definatley in the wrong state.  This has to be the best thread.  Need one in F-Chat.  :D

I use a little garlic salt on mine prior to cooking and sometimes add a little sesame oil or soya sauce which also adds a salty tatse.

As you say a good meat doesn't need any camoflauge.

scored a job at Feliciano's in Wakefield st City, waiter and washing dishes.

menu is a hoot...........whatever the chef cooks.........the customers eat, u want pasta or pasta, choice is simple.

washing dishes is for the babes. As the boss man says, i must be the only dishwasher who drives to work in a ferrari

It's still my dream to be a pizza delivery guy when I buy my first Ferrari - however nowadays I'm not sure about ever wanting a Ferrari. :?

Was at the video store the other day and was having a moment of reverie when I worked there in my teens...  laughing all night, meeting dozens of new hot chicks, making fun of people...  ah good times.  Been considering doing something like that again just for the sake of it!

So I was in my butcher's and I ask for a yea-thick chunk of dry aged scotch fillet - she goes "just one?" and I'm like "yes - as usual.".  Another chick pipes up "you usually get just one rib-eye, need a change?"... "Oh no that'll be tomorrow probably." and she's like "Ah, the life of a single guy huh?"  Yeah - thanks! :?

Oh well all's good - was an awesome piece of meat, and it felt ok when I told them yeah my weekend steak is usually alone cos everyone I know has a family life and stuff, and she said "well, if you had a wife and kids you probably wouldn't have the time or money to enjoy a $20 steak."  :D
