excuse the quick drawing, but if you want an incar camera and dont want to impare your vision, how about something like this. it would be pretty easy to fabricate, i might just make one myself for the sake of it.
but it would fit on the head rest posts. and stick out into the midle of the 2 seats. you could fasten it with the turning screws as pictured, and as for the camera, you could add your own quick release or tripod head onto it.

could probably make it for $10-$20

Ive seen these types of setups before, and they can work well, even better if you can mount them between both headrests.... have both seats set in the same position for it..... less room to vibrate etc

If you have a two-seater you can just mount it on the rear window, works great.

The headrest mount enables the camcorder to be mounted onto a car's headrest. It is fully adjustable for the different widths of headrest. Stuff from the Hague site (first post) is very good. A few friends have bought a couple of different mounts and they are all fantastic at any speed. I wouldn't recommend off road tho.

I have a nice Manfrotto suction for hanging DSLR's off the outside (or inside) of cars. Works a treat, speed tested at 170kph.

I also use heaps of RAM mounts from the USA (I sell them) and we mount heaps of incar video stuff with them. Goober has one in his 360Ch.
Rattle/shake proof, and decently priced.  Roll bar, suction, you name it they have it.

So do I, but lets keep it relatively legal to the speeds we are allowed to do on stages 

As a laugh I have just noted that UK mount talked about before is a Manfrotto!!  I bought mine here in OZ (WA) for about $215 AUD.
